Spring Dinner Menu Debut!
Picán debuted the new Spring Dinner Menu April 2nd. Prior to the evening dinner service, the entire front of house wait staff sat down in the Bourbon Room and had a complete, formal tasting of the new menu. Our chef overviewed each menu item for the Krewe – ingredients, sourcing, preparation, plating – and answered questions from wait staff eager to provide guests information based on first-hand knowledge and personal tasting experience.
With a menu showcasing a variety of producers, such as Coke Farm (organically grown fruits and vegetables since 1981, with roots back to the early days as a supplier Chez Panisse); County Line Harvest of Petaluma (organic vegetables); Mary’s Free Range Chicken (producers of Mary’s Free Range Air Chilled chicken, and the basis of Picán’s signature Southern Fried Chicken and Mary’s Chicken Cracklin’s); Falls Mill (producing rustic stone ground grits using an historic waterwheel dating to 1906 to power the millstones; they are on the menu in the Gulf Shrimp & Falls Mill Grits, a guest favorite since we opened in March, 2009!); Big John’s Cajun Cheddar (spicy hand rubbed cheese, developed by Ogden, UT chef John Dearmin and made by Beehive Cheese Co., and an essential ingredient in our Big John’s Cajun Cheddar Yorkshire Pudding) and Straus Family Creamery (you’ll find this on the Dessert Menu – check out the Hot Red Velvet Cake served with their ice cold malted milk), the menu is fresh, seasonal and carefully curated.
Picán’s new entree items include Hand Foraged Mushroom-Tofu “Meatballs”; Cajun Spiced Pork Tenderloin; Pan Roasted Gulf Snapper and Louisiana Catfish Étouffée. We’re debuting a new Nouvelle Cuisine de Sud section of the menu where guests will find three out-of-the-box entrees pair with with wines – Butter Poached Maine Lobster, Venison Tenderloin and 12oz Char Crusted Ribeye Steak.
Many guest favorites are still on the menu – from Fried Green Tomatoes to Warm Artichoke, Shrimp & Louisiana Blue Crab Dip and Low & Slow Spicy Barbecued Pork Ribs. And many other items have been reworked to provide a fresh take on classic dishes.
