Elijah Craig, named for a reverend who lived in Virginia. He kept a warehouse where he stored barrels and one day experienced a devastating fire. In a “happy accident,” he used charred casks regardless and found they imparted a complexity, depth of character and a wonderful flavor profile with the release of both char and sugars into the whiskey. The 12 year is thick, oaky, toffee and spicy fruit with a hint of barrel resin and creamy sweetness. It’s corn on the front taken neat and with a drop or two of branch water opens up a bit of nuttiness. Beautiful in the bottle! A fantastic brand from Heaven Hill; if you’re not already a bourbon drinker, you’ll likely be a convert!
